I've seen her middle name as Eliza several times, but not as Elizabeth.

Elijah Rue died at the home of his daughter, Mrs. William R. Coward, near Princeton Junction, Wednesday morning of last week, after a short illness. Mr. Rue was born near Hightstown ninety-one years ago and has spent all his life in that vicinity. During the early period of his life he carried on the business of carpenter and builder. He is survived by two sons, George, of Bloomfield, and Elwood, of New York City and a daughter, Mrs. Wm. E. Coward with whom he made his home. The funeral was held at noon Saturday 30th, at his late home, Dr. O. P. Eaches officiating. Interment in East Windsor Cemetery. [The Monmouth Inquirer (Freehold, NJ), Thurs., 4 Jan 1912]

Elijah Rue AND Catharine E. Bodine were married 16 Feb 1845 in Trenton.
The Rue family was living 1850-1880 in East Windsor Township, Mercer County, New Jersey where Elijah worked as a carpenter. Catherine Bodine Rue was Kate, age 30 in 1850 Catharine, age 41 in 1860, Eliza, age 53 in 1870 and Catherin, age 68 in 1880.

The New Jersey State Census of 1895 records Elijah Rue, aged over 60, living in East Windsor, but his wife was not recorded. In June 1900 and April 1910, he lived with his daughter and son-in-law William and Elizabeth Cowart in East Windsor Township, Mercer County. In June 1900 his birth date was given as May 1821, aged 79. In April 1910, he is 88. If Elijah Rue was born in May 1821 as given in the 1900 census, then his birth date matches that of the June 1850 census when his age was 29 and that of his obituary, below, when he died in January 1912 aged 91.
