Notes for: Emma Elizabeth Bodine

Below are some recipes that came from a book done by the Ladies Aid Society of the Methodist Episcopal Church of Kingwood in Hunterdon County, New Jersey in 1920.

From Mrs. Geo. W. Kugler:

Salmon Balls

1 can salmon, 1 cup crackers rolled fine, 2 eggs well beaten. Make in balls, fry in lard until a nice brown.

Apple Custard Pie

1 cup tart apples (that have been ground fine through a food chopper), 1 egg well beaten, sugar to sweeten, a little nutmeg and enough milk to fill crust, 1 tablespoon of flour; this makes one pie and should be baked with one crust as pumpkin pie.

Note: The following recipes were submitted under the name of Mrs. Geo. Kugler, omitting the W. I do not know if it is the same person, but I have included them here.

Cold Water Sponge Cake

4 eggs beaten together until light, add 2 cups sugar, 2 cups flour, 2 teaspoons baking powder. Last of all 1/2 cup cold water, put in tins and bake; this will make a three layer cake. Note: This recipe was also submitted by Mrs. Wesley Brady.

Delicate Cake

Cream 1 1/2 cups sugar and 1 large tablespoon butter. Then add 2 eggs (save the white of one for icing), 1 cup milk, 2 cups flour , 2 teaspoons baking powder. Bake in three layers.

Marble Cake

Dark part

1 cup brown sugar, 1/2 cup molasses, 1/2 cup milk, 2 cups flour, 1/2 cup butter, 1 teaspoon cinnamon, 1/2 teaspoon cloves, 1 teaspoon soda, yolks of 4 eggs, a little nutmeg.

Light part

1 1/2 cups sugar, 1/2 cup butter, 1 cup of milk, 2 large cups flour, 1 large tablespoon cornstarch, whites of four eggs, 2 teaspoons baking powder, 1 teaspoon of vanilla or lemon.

Filling for Cake

One and onehalf cups pulverized sugar, 1/2 cup butter, 1 tablespoon cocoa, 3 tablespoons coffee; let cake get cool before putting together.
